CHESTNUT/PHOLIOTA ADIPOSA
The Chestnut mushroom, or Pholiota Adiposa, belongs to the same family as the Nameko mushroom. It's an excellent example of a mushroom with rounded small brown caps. Bits of the veil frequently stick to the cap after it has opened before harvest. This mushroom has a unique flavor. After cooking it maintains a very particular texture, almost crunching even after the chitin walls have been weakened by cooking. Chestnut mushroom's mild, earthy flavor has notes of a peppery flavor.
